To make Chocolate Fork Biscuits, follow the recipe above, but use only 120 g (4½ oz) self-raising flour along with 15 g (½ oz) cocoa. Bake until browned.

To make Orange or Lemon Fork Biscuits, follow the recipe above but add the grated rind of 1 small orange or lemon when you beat in the caster sugar. Bake until very pale golden.

Melting Moments

These old-fashioned biscuits are very short in texture. They are best eaten within a couple of days of making. This recipe makes about 36 biscuits.

225 g (8 oz) softened butter

175 g (6 oz) golden caster sugar

2 large egg yolks

a few drops of vanilla extract

275 g (10 oz) self-raising flour

50 g (2 oz) porridge oats

12 red or natural glacé cherries (optional)
